Like my smoothies, my soups have the same stock base:

1 tbsp extra virgin olive oil
2 celery stalks chopped
2 carrots chopped
1 medium onion
2 cloves of garlic, minced
1 bay leaf
8 cups vegetable, chicken or beef broth (homemade is best when you have it around)

Heat the olive oil over medium heat. When hot, had the onion, garlic, celery and carrots. Sautee for 5 minutes or until the onion starts to turn translucent. Pour in your stock and add a bay leaf. Bring to a boil/add additional ingredients. 

You can add just about anything to this base... 
- chopped spinach
- 19oz can of chickpeas/kidney beans/black beans
- chopped escarole
- 1/2 cup barley (dry)
- 1/2 cup pasta (alphabet, mini macaroni)
- 28oz can diced tomato
- 1/2 cup rice (dry)
- 1 cup brown lentils (rinsed)

If you want to add meat to your soup, sautee the meat with the oil and garlic until cooked. Then add onions, carrots, celery, bay leaf and broth.

AND, if you want to spice it up, add a couple squirts Srirachi sauce (the one with the rooster on it) - but watch out it's hot!
